The only way this can be "healthy" is if you eat as is. It is rich and creamy, yet very low in carbs and it kept me full for hours. I promise i did not sneak in any rice or potatoes (it would pair amazingly with both), i was tempted, but i didn't.
Here is what you'll need for a meal for 2;
2 Chicken Breast or 1 Large one
1 Cup Full Cream or Whipping Cream
1/4 Onion - Chopped
1 Cup Mushrooms - Sliced
Asparagus
1/2 Cup Arrow Root/Flour/Bread Crumbs
1/4 Cup Grated Parmesan/Asiago Cheese
2 Tablespoons Olive Oil/Vegetable Oil
1 Egg
Seasoning
Put chicken breast in a ziplock bag or on a chopping board and cover with wax paper, then beat if gently with a rolling pin till you have flattened it out.

Season both sides with salt, pepper. I used a spicy seasoning mix.

Set your your coating assembly line.
In a shallow bowl beat 2 eggs and and in another bowl mix arrow root/flour/breadcrumbs with a pinch of salt, pepper, powdered garlic and powdered ginger. Seasoned breading flour means tastier chicken.
For those who don't know, breading locks in moisture of your chicken and provides a nice crust after you bake or fry. Arrow Root is a healthier option to flour and I've found that it gives a better crust.
Coat your chicken breast with the eggs then transfer to the bowl with flour and coat both sides then set aside. Allow to rest for about 5 minutes so that the crust dries a little.
Tip - Always keep a portion of your flour mix aside to properly coat or dab on some areas that may still be too wet.

Put 1 tablespoon of olive oil in a hot pan and sear both sides of your chicken breast for 3 minutes each and set aside. If your chicken breast is thick and isn't cooked through, you can pop it into the oven at 350F for 7 - 10 minutes and that should take care of it.

Take the chicken out, add remaining 1 tablespoon of olive oil, chopped onion, mushrooms and asparagus. Season with salt, pepper, 1 seasoning cube and a pinch of powdered garlic. Stir fry for 2 minutes.

Pour in double cream and allow to simmer until it has reduced by about a third.

Add grated cheese and allow to simmer for another minute.

Plate with chicken and serve by itself or with potatoes or rice.
