Pasta Carbonara is the simplest and quickest pasta dish you can cook, and it doesn't sacrifice and flavor. It literally takes under 20 minutes from start to finish, and requires only a handful of basic ingredients - pasta, pancetta/bacon, eggs and cheese. Then of course a pinch of salt and pepper. That's it!
To get started, you will need;
10oz Fettuccine or Spaghetti/Linguini
1/2 Cup Parmesan Cheese
1/2 Cup Pancetta
1 Teaspoon Grated or Finely Chopped Garlic (optional)
2 Eggs yolks and 1 whole egg
Salt & Pepper
While your pasta is cooking, start with your pancetta in a dry pan on medium heat.
Move it around frequently so that it doesn't burn, and when it has rendered its fat, add garlic (optional).
Mix/whisk together cheese and eggs. (i totally could've used a bigger bowl, lol)
When pasta is cooked al dente (firm to the bite), scoop 1/2 a cup of the cooking water and drain the rest.
Immediately transfer pasta to the pancetta and pour in your whisked eggs and cheese.
Mix properly, preferably using a pair of tongs for ease, then season with salt and cracked black pepper.
Loosen with a little pasta water if needed.
Throw in some chopped parsley, put it on a plate and top with a little more parmesan cheese.

I got myself a Philips pasta maker for Christmas and made herb fettuccine from scratch for this recipe. It was a pretty cool experience. Cant wait to play with it some more.
The recipe works as well, of course, with store bought pasta.
